Combine the oregano, garlic powder, paprika, onion powder, salt, and pepper. Brush the chicken with olive oil and coat with the spice rub.
Using a grill or grill pan, grill the chicken for 4-5 minutes per side until cooked through. Let rest for 5 minutes.
Make the dressing: Whisk together the olive oil, red wine vinegar, pepperoncini liquid, Dijon mustard, and oregano to make the dressing.
Toss together the Romaine, cucumbers, tomatoes, green pepper, red onion, pepperoncini, feta cheese, black olives, and dressing. Top with sliced grilled chicken.
